I serve cucumber sandwiches at many of my tea parties because they are not only easy but taste great and go with everything. You can always make a regular size Lemony Cucumber Sandwich for a quick, easy and healthy lunch! That little dash of lemon pepper seasoning adds a hint of lemon that goes perfectly with cucumber. Be sure to make plenty because these tasty little sandwiches disappear quickly at any tea party! By slicing the cucumbers a bit ahead of time and placing them between sheets of paper towels, you can be sure that your tea sandwiches are crisp and fresh. Excess moisture will be absorbed by the towels and cucumber will be crunchy without any worry of having soggy bread!

You don’t have to have this cute little bread for your sandwiches, but I love it because I don’t have to trim crusts or cut any bread and they are incredibly fast to make. I enjoy the flavor of the light rye with the lemon and cucumber flavors, too. Aren’t they cute? They even passed with flying colors for a difficult (vegetable speaking!) crowd when I served them to my five grandchildren. One is a veggie lover, but the rest of them are a bit less enthused over veggies, and they all loved them! No cucumbers tucked in a napkin or arugula any under plates. They just gobbled them up!
They will please even a tough crowd!
- Bread (I used light rye mini bread)
- Cream cheese; softened
- Lemon pepper seasoning
- Cucumber; sliced
- Slice the cucumbers and place between paper towels so excess moisture will be removed.
- Spread a small amount of cream cheese on top and bottom bread.
- Sprinkle with a bit of lemon pepper seasoning.
- Add sliced cucumber and a touch of arugula.
